Introduction

Let’s make some products from low-value items that Tasterrific!

In the Spar compound in Lagos, I share a large, spacious three-bedroom apartment with a Lebanese Chef, Bashir. He recently went to Lebanon to visit his family and he shared products with me! It’s a product we can make TODAY!


A. Chef Bashir’s Lebanese Kabab’s

Bashir wrote from Lebanon that the minced beef is a mix of sirloin and ribeye steak “half, half,” seasoned with:

  • finely well-chopped onion,
  • salt and
  • black pepper.

Packaging and display

Vacuum pack or overwrap and also sell from baymarines.


B. Chef Bashir’s Lebanese Chekaf (cubes with fat cubes)

  • used sirloin
  • mixed with tenderloin and
  • lamb fat

Prepare onion with spices

  • grate half and onion
  • salt and black pepper in a bowl with any kind of oil.
  • mixed well.

Then, mix this with the beef and fat and thread onto a skewer.

Packaging and display

Overwrap or vacuum pack. Also, sell from baymarines.


Just before Christmas of 2021, I came across Milen’s beef heart pastrami.

C. From Sofia in Bulgaria: Milen’s Beef Heart Pastrami

Milen Nenchev’s recipe:

Controlled salting for 10-12 days. The right amount of spices for 1000 grams

  • 30 grams of salt (12 nitrite / 18 plain)
  • 5 grams of sugar
  • 5 grams of black pepper
  • 5 grams of conifer
  • 2 grams of cumin
  • 2 grams of pride
  • 3-4 pcs of cloves
  • 1 gram of cardamom
  • 50 ml of red wine

The results are spectacular!

D. Milen’s Lukanka from a Beef Heart

Hang from an area in front of the butchery, either span a wire or a tight line.


E. Korean Style Beef Short-ribs with Marinade Sauce

Vacuum pack with marinade and sell frozen. Also display and sell it from baymarines.


F. Texan Style Mini Beef Short-ribs with BBQ Sause

Vacuum pack with sauce and sell frozen. Also, display in baymarines.


G. Grilled Beef Bones

Packaging and display

Sell frozen with spice pack added. Overwrap or vacuum.


H. Texan Style BBQ Beef Neck Chops

Packaging and display

Neck chops – add marinade sauce and vacuum and display in baymarines.


I. Beef Mid-Rib’s with BBQ Sause

Packaging and display

Cut the larger ribs in this style, add with BBQ Sause in a vacuum bag and also display in baymarines.
