Simulated progress vs real insight. One pitfall when using AI for writing is that it can simulate progress on a draft without actually achieving the author’s intent. AI-generated prose often sounds polished but falls apart under scrutiny (Weidinger et al, 2021). It may string together relevant statements, yet collectively they lack a coherent argument or narrative flow. ChatGPT writes, but it does not think (Marcus, 2022).
Hallucinations and false information. Generative AIs can fabricate references, invent authors, and produce entirely fictional publications that sound convincing but do not exist. The AI is not intentionally lying; it is simply generating text that appears statistically accurate.
Lack of accountability or ethics. AI models do not have intentions or accountability. They will just as readily generate misinformation as helpful content. They cannot check whether a claim is defamatory or plagiarised unless explicitly programmed to do so (Bender et al, 2021). In professional communication, this is a huge gap. A human editor approaches a text with an ethical lens: is this claim supported by evidence? Is the tone appropriate and respectful? Is the work original?

Hallucinated recipes and risks. AI recipe tools have generated dangerous suggestions, such as dishes involving toxic substances (Harwell, 2023). These errors stem from AI’s lack of understanding. In food tech, the risks include unsafe formulations or impractical methods. Human oversight is essential.
The human edge in R&D. Product development involves setting multi-faceted goals, balancing constraints, and designing experiments – all tasks requiring human judgement. AI can support analysis but cannot replace the intuition, ethics, and creative iteration of a food technologist (Floridi and Chiriatti, 2020).
Conclusion
AI tools like ChatGPT are powerful aids, capable of speeding up certain tasks.
