ECA (Electrochemical Activated) water produces anolyte and catholyte, powerful tools in the meat processing environment. At a cost of 3g of salt/L of water, CIP cost will never be this low. With unique characteristics, water binding will never be higher. Here I provide basic characteristics of anolyte and catholyte produced by the ECA process as well as application notes for the meat industry.
